This chicken pot pie would be perfect to serve on Thanksgiving if you are only 2 or 4 people, especially if you swapped the chicken for turkey. You don’t need a big assortment of food, just a dish like this made with love.
The smell and taste of homemade chicken soup is so comforting, but not everyone can sit around and wait for the chicken to boil, then shred it and boil the bones for another hour. We are busy and can’t sit around cooking all day. I’ve adjusted my mom’s chicken soup and made it a little easier, but still soooooo delicious. It is my son Dominick’s favorite meal. I have a couple of secret ingredients that make it extra special. I don’t usually have enough leftovers to freeze it for another night!
If you haven’t noticed, I make a lot of soup. Soup is usually easy, quick , comforting and delicious. There are two things that are a must have in soup if you intend on feeding your family at dinner time. Meat and Pasta of course! Without them a soup is more of an appetizer than a family meal. My family can eat, so I have to be able to fill them up or I’m in trouble.
I couldn’t get out too often when my boys were small so coming up with dinner for all of us gave me something to think about. Feeding the Fam on a budget was a challenge.
I love stuffed peppers, but it is a big job. I usually like to roast the peppers a little before I even stuff them so they are soft, otherwise my family only eats what’s in the pepper. So, all that work for them to pick around the actual pepper. Hence, the Stuffed Pepper Stir Fry! It is much easier than the traditional stuffed peppers. It is perfect for a quick weeknight dinner.
If corned beef and cabbage isn’t your thing, this just might be!
This is one of those meals that I make if I need to feed a lot of hungry people. You can make it all ahead and then just heat and serve. It’s filling and delicious.
If you are looking to keep it light for the new year, use chicken sausages and no bread. You can even add mushrooms to get more veggies in.
This is a perfect baked dish for the holidays. I would make this ahead of time and do nothing in my PJ’s on Christmas. Sounds like a perfect Christmas Day to me…
This pulled chicken recipe is super easy and you only need a couple of ingredients. I love serving this on top of the shoepeg corn salad with a side of cornbread. You can enjoy a summer meal without having to BBQ…
One of my mom’s specialties is her breaded and baked chicken cutlets. It’s really very hard to get them exactly like hers, but they come close.
