I call this weeknight chili because it is super quick and easy and perfect for a busy weeknight meal. But this would be a perfect comfort meal on a Sunday night as well.
Thanksgiving stuffing is special to most people because it is what they grew up on. It is what makes them think of Thanksgiving. Some people serve it on the side and call it dressing. Others stuff it in the cavity of the turkey and call it stuffing. We call it stuffing but serve it on the side of the turkey. Oh, and it doesn’t have any bread in it! So, we are all confused!
I used to make this salad years ago. I’m back on an arugula kick and love it! It has a spice to it that I love and can stand up to grilled steak or chicken on top. If steak is involved my boys come running. Summer is here and we have the grill going a couple of times a week. This is one of the simplest dinners you can pull together and everyone will enjoy it.
I couldn’t get out too often when my boys were small so coming up with dinner for all of us gave me something to think about. Feeding the Fam on a budget was a challenge.
If you ask me whose playing in the Superbowl, I promise you I will NOT know the answer. My husband says he stopped watching football once he started dating me. And that’s pretty accurate. No one in my family ever watched sports, so that is that. Lol. He can totally watch it, but my main focus will always be the food and the halftime show! But now that we have 2 boys, he has made a point to start watching it again. I’m ok with that, as long as there is some good food, not just a bowl of Doritos!
I have been making these burritos for years. When I know I have a busy night ahead of me, I prep them in the morning and heat just before dinner. They are easy, filling, and delicious! Meat sauce is my go to sauce when I just don’t want to make meatballs. It’s the lazy way out, but it doesn’t matter. It’s still so good! And ridiculously easy, healthy and fills the bellies up real good.
