Grilled Skirt Steak

I found a similar recipe to this a couple of years back. I made some changes and now it is my go to recipe for skirt steak. My family loves skirt steak. I like it because it’s tender, delicious and easy for the kids to chew. For some reason I have a fear of everyone choking on steak. Lol.

This is the perfect recipe to use for fajitas, stir fry or just a big BBQ with a side of potatoes and veggies!

Make sure you buy extra skirt steak. It seems like a lot, but it shrinks when you cook it. And marinate it overnight for the best flavor.

Grilled Skirt Steak

Ingredients

  • Skirt steak(about 3 pounds)
  • Juice from 2 limes
  • Juice from 1 orange
  • 1/3 cup of olive oil
  • 4 cloves of garlic, minced
  • 1 tsp ground cumin
  • 1 tsp salt
  • 1/2 tsp pepper

Directions

  1. Place steak in a shallow pan or a big storage bag.
  2. Add all the ingredients and place in the refrigerator until ready to cook.
  3. Make sure your grill is on high heat.
  4. Cook on each side for several minutes depending on the size of your steak.  It should be dark and crispy on the outside.
  5. Take off the grill and let rest for about 10 minutes.
  6. Skirt steak is best when sliced really thin on an angle against the grain.

Enjoy!

This would go perfect with any of the following side dishes:

No Romaine, No Problem

Roasted Peppers with Garlic

Mashed Potatoes

Twice Baked Potatoes

Smashed Potatoes
