Bring on the brunch

Who doesn’t love brunch?  You get the best of both worlds.  There’s always a variety of foods and something to eat for everyone.  When we were on vacation this summer in New York my sister Ali had an amazing brunch for my family after my husband and my two boys ran a 5K in a nearby town.  Her menu was delicious!  Two of my favorite things she made were NO MAYO Chicken Salad and NO MAYO Egg Salad.  Both of them were better than when you make it with mayo and way healthier.  I’ve been craving these brunch items since we got home.

She also served bagels and cream cheese, a lox platter, fruit, and pastries including her mother-in-law’s homemade blueberry crumble!(I have the recipe…!)


No Mayo Chicken Salad


  • 1 good quality rotisserie chicken
  • 1/2 cup of chopped celery
  • 1/2 cup of onions(or scallions)
  • Salt and pepper to taste
  • 1/4 cup to 1/2 cup of plain Greek yogurt(2% works great)
  • A bunch of chopped parsley


  1. Shred the chicken making sure not to get any bones and put in a large bowl.
  2. Add the celery, onions, salt and pepper.
  3. Add a 1/4 cup of yogurt to start. Mix until combined. Add more as needed.
  4. Add parsley and mix again.

This is a great option to make ahead and pack as lunch for work or school😊

No Mayo Egg Salad


  • 8 hard boiled eggs, chopped
  • 2 avocados
  • 1/2 cup of chopped celery
  • 1 tablespoon of plain Greek yogurt(2%)
  • salt and pepper to taste
  • small bunch of chopped parsley
  • paprika(only to sprinkle on the top in the end)


  • Hard boil the eggs and let cool.  Follow the link on how to make⇒⇒  Perfect Hard Boiled Eggs
  • Peel and coarsely chop the eggs.  Place in a large bowl.
  • Add the celery, salt and pepper and parsley.
  • Scoop out the avocados and put in the bowl with the rest of the ingredients.
  • Mix until all ingredients are combined.  Add the yogurt and mix again.
  • Sprinkle the top with a little bit of paprika before serving.

Both the chicken salad and the egg salad  can be served with your favorite bread, crackers, or by itself!
